Rigatoni a La Vodka

It's truly incredible how amazing this turns out every time despite the ingredient list being next to none! Even those who are not very skilled in the kitchen can execute this dish no problem. This dish is completely customizable depending on your preferences - if you prefer a creamy pasta just add more cream, if you want more spice add chili flakes or none at all if spice isn't for you.


Omitting the vodka sauce is fine too if you don't want alcohol - though you won't taste it as it's just used to deglaze the pan then the alcohol evaporates during the cooking process.


Use any type of pasta you have on hand, it will still taste amazing!

Ingredients

  • 2 cups rigatoni or penne
  • 2 tbsp butter
  • 1 garlic clove, minced
  • 1 shallot, finely diced
  • 2/3 cup tomato paste
  • 1 1/3 cup cream
  • 1 cup
  • 2 tbsp vodka
  • 2 tsp chili flakes
  • parmesan to garnish
  • parsley to garnish
  • salt for boiling
Instructions

Bring a large pot of salted water to a boil
Add the pasta then cook per boxed directions, reserving some pasta water for later
In a pan, melt the butter then add the shallots & minced garlic until aromatic
Add the tomato paste then saute until the paste darkens
Deglaze the pan with vodka, letting the alcohol evaporate
Add the cream and let it thicken
Add the cooked pasta to the sauce, then slowly add pasta water as needed until you reach your desired sauce consistency
Garnish with parmesan cheese & parsley
