Easy weeknight meals are exactly what this busy mom needs! I love a meal that is quick, healthy and delicious that everyone in the house will eat. This one pot pepper pasta is just what you need!


Packed full of flavour, the tender peppers, tomatoes and beef all simmer together to create a delicious tomato-y sauce that has the perfect amount of spice. This meal makes a lot so hello leftovers or can easily serve a crowd.


I like serving this up with a simple side salad and crusty bread to soak up the yummy pasta sauce. Hope you enjoy this recipe!

Ingredients

  • 2 lbs lean ground beef
  • 1 cup diced white onion
  • 3 cups assorted bell peppers, diced
  • 2 cloves garlic, minced
  • 2 packages taco seasoning
  • 1/2 cup water
  • 1 - 540 mL can diced tomatoes with their juices
  • 2-3 cups beef broth
  • 3 cups penne pasta, uncooked
  • 2 cups shredded cheese
Instructions

In a large frying pan, cook ground beef over medium high heat until no longer pink (about 8-10 minutes).
To the ground beef, add in onion, peppers and garlic. Sauté into tender crisp and garlic is fragrant (about 6-8 minutes).
Lower heat to medium and add in taco seasoning and water. Stir until combined and allow mixture to come to a simmer to thicken (about 3-4 minutes).
Next add in the tomatoes, beef broth and pasta. Lower heat to medium low and stir to combine. Cook until pasta is Al dente and the liquid is absorbed *
Remove from the heat and stir in shredded cheese until melted.
Serve hot and enjoy!
Tips
  • Start with 2 cups of beef broth and continue to add while the pasta cooks if needed. Depending on your brand of noodles, more broth may be necessary when cooking.
