Jazz up your pesto pasta with green beans and potatoes. Ready in 15 and can be vegan!


Pasta genovese is the classic way of having pesto pasta in the region where pesto originated, and incorporate some veg in it! If you use lentil, chickpea or other types of legume pasta you get extra protein points thrown in there.


Plus, I don’t know about you but in my hectic life with a full-time job and two very young children, one-pot meals are my new best friends. I mean, you can’t beat the little washing up!

Ingredients

  • 1 cup green beans
  • 1 1/3 cups potatoes
  • 3 1/2 cups pasta
  • 2/3 cup pesto (vegan if preferred)
  • parmesan (or nutritional yeast if preferred)
Instructions

Put on a kettle to boil.
Trim the ends of the green beans and cut them in half. Cut the potatoes in small cubes.Put both veg in a pot with the salted water and boil for 2-3 minutes, then add the pasta. Let everything boil for 10 minutes then drain.
Mix with the pesto and serve with some parmesan or nutritional yeast on top!
