  • 1/2 lb cooked pasta
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup whole milk
  • 1 tsp dijon mustard
  • salt and pepper to taste
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1 1/2 cup pumpkin puree
  • 1 cup shredded cheese
  • 1/4 cup grated parmesan cheese
Instructions

First, cook the pasta until al dente and set aside.
In a nonstick frying pan over medium heat melt the butter and stir in the flour.
Cook for 1 minute and pour in the whole milk, dijon mustard, and season with salt and pepper to taste, dried oregano, and garlic powder.
Stir in the pumpkin puree and mix until everything is combined.
Pour in the grated cheese and grated parmesan and stir in the cooked pasta.
Mix everything until combined and pour the mixture into a greased casserole pan.
Sprinkle with some extra grated cheese and bake in an already heated oven at 350°F or 180°C degrees for about 20-25 minutes.
