Easy Salmon Pasta Recipe

This easy salmon pasta recipe is great for busy weeknights. It's simple, quick to make, and you can use the leftovers for lunches and dinners throughout the week.
Salmon cooks so quickly. By the time the pasta is ready, so is the salmon and we're ready to combine and serve. Easy peasy.
This recipe is in regular rotation at our house because it's so easy to keep frozen peas on hand, along with pasta and either fresh or frozen salmon.
First, season and bake the salmon. While that's cooking, prepare the pasta and peas.
In a skillet, saute onions in butter until softened. Add in salt, pepper and wine (if using). Simmer to reduce.
Gently fold in cooked pasta & peas, flaked salmon, dill, and lemon juice.

Ingredients
- 12oz salmon, cooked and flaked
- 2 cups dry cellentani (or your favorite) pasta
- 8oz frozen peas
- ½ yellow onion, chopped
- ½ cup white wine
- 4 Tablespoons butter
- 1 teaspoon coriander
- 3 Tablespoons fresh dill
- salt and pepper to taste
- 1 Tablespoon lemon juice
Instructions
- Preheat oven to 350 degrees
- Season salmon with salt and pepper and bake in a pan coated with nonstick spray until flaky - set aside
- Boil pasta, per package instructions, along with the peas until both are tender, drain and set aside
- In a skillet, saute the onions in butter until fragrant
- Add salt & pepper and wine, simmer for about 10 minutes
- Gently fold in cooked pasta & peas, flaked salmon, fresh dill, and lemon juice
- Plate and enjoy!
