As you know, cottage cheese has taken the world by storm recently due to its high protein content, versatility and incredible taste. This cottage cheese tomato sauce pasta is so easy to make for nights that you have rushed home from work and just do not have the energy to spend hours in the kitchen yet you do not want to have another day of take out! I have opted to not make the recipe with an additional protein source, but it pairs beautifully with grilled chicken breast or regular meatballs. I hope you enjoy this dish as much as I do.

Ingredients

  • 1 cup of cottage cheese
  • 1 cup of tomato sauce
  • 3 cloves of garlic
  • 1 cup of parmesan cheese
  • salt and pepper to taste
  • 250g of whole wheat penne
  • 2 tablespoons of olive oil
  • Handful of kale
Instructions

Blend together olive oil, cottage cheese, parmesan, tomato sauce, garlic, salt and pepper
Once blended add the sauce to a pan and cook on medium high heat for 10 minutes
Add your handful of kale for the sauce and cook on medium heat for 5 minutes and turn off the heat
Bring a pot of water to a boil and salt the water, add the penne to the water to cook it
Once penne has cooked, add it to the pan with the sauce and mix
Serve topped with parmesan cheese and hemp seeds
