Are you trying to keep up with all the cottage cheese hype you are seeing on social media these days? This is the recipe for you! It is pasta with a nice creamy and delicious Alfredo sauce. The recipe requires only a few ingredients, resulting in it being super quick and easy to make. I have used whole wheat penne for my pasta, but you can always substitute for your pasta of choice. Ingredients

  • 1 cup of cottage cheese (any percentage of fat will do)
  • 1/2 cup of grated parmesan
  • 1/2 cup of kale
  • 5 cloves of garlic
  • salt and pepper to taste
  • 150g of Pasta (I used whole wheat penne)
  • 1/4 cup of milk
  • 1 tablespoon of olive oil
Instructions

Combine your cottage cheese, milk, garlic cloves, salt, pepper, and parmesan into a blender.
Blend the mixture until it is smooth and creamy
Pour the mixture into a pan that has olive oil in it. Cook the sauce mixture on low heat until it has started to bubble a little bit. Add the kale to the sauce, and cook the kale in the sauce for a minute.
Cook your pasta of choice by bringing a pot of water to a boil, lightly salting the water and cooking the pasta until it is soft.
Once pasta is cooked, drain the water out, and serve the pasta with the sauce on it.
