Cheesy Veggie Tortellini Bake

As much as I love my pasta, sometimes it gets boring to eat the same spaghetti meal all the time. I was looking for ways to get creative and so I bought some tortellini. Sometimes, this is enough of a routine change-up for me that I am satisfied, but not this time. I wanted to sneak some veggies in to make the dish a bit healthier, so I made this cheesy vegetable tortellini bake.
This dish is great because the tortellini cooks from frozen in the sauce, making it super flavorful, easy, and most importantly, less dishes! One pot to cook the veggies, sauce, and tortellini, then dump into a casserole dish, spread the cheese on top, and bake. So easy, so delicious, and if you're in a rush just serve right from the pot and sprinkle the cheese on top of your plate! This dish doesn't require much planning, making it great for a quick weeknight meal. Try it with your favorite veggies, or use the ones I've suggested for a delicious meal the whole family will love!
Cheesy Veggie Tortellini Bake

Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 1 clove garlic, minced
- 1 stalk celery, diced
- 3 large carrots, diced
- 1 bell pepper, chopped
- 1 zucchini, quartered and sliced
- 1 teaspoon oregano
- 1 teaspoon Italian spice
- 1 teaspoon basil
- 3 cups strained tomatoes (can substitute tomato sauce)
- 1 cup water
- 1 400g bag frozen cheese tortellini
- 2 cups shredded mozzarella
Instructions
- In a large pot, heat olive oil then add onion, garlic, celery, carrot, pepper, and zucchini and cook for 4-5 minutes until veggies start to soften
- Add oregano, italian spice, basil, strained tomatoes, water, tortellini and stir to combine
- Bring to a boil, turn down heat to low and allow to simmer, covered, for 20 minutes.
- Transfer contents into a casserole dish, top with cheese, and broil for 2-3 minutes, until cheese is golden and bubbly
