I am making all the pumpkin treats this October! This pumpkin spice baked oatmeal is a great thing to meal prep for breakfast and eat throughout the week. It has just the right amount of pumpkin flavor and cinnamon spice. . I like adding a little bit of cinnamon sugar on top before baking as well. If you want it sweeter just add more maple syrup, but I don’t like it too sweet when I am eating it for breakfast. You could also skip the oat flour and just do regular oats instead. That would give you more of an oatmeal texture, where as blending the oats gives it a little more of a cake texture.

Ingredients

  • 1/2 cup pumpkin purée
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup milk
  • 3 Tbsp maple syrup
  • 1 cup oat flour (blended oats)
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
Instructions

Preheat oven to 375° and grease a small baking dish.
In a bowl, combine all ingredients together and pour into baking dish.
Top with cinnamon sugar if desired.
Bake for 30-35 minutes or until set.
