  • 3 1/2 cups (about 200g) macaroni or other pasta such as penne
  • 2/3 medium head of cauliflower, cut into small florets
  • 2.4 tbsp (33.3g) butter
  • 2.4 tbsp (33.3g) all-purpose flour
  • 1 2/3 cups (400ml) milk
  • 1 tsp dijon mustard
  • 1 cup (100g) grated cheddar cheese
  • 2 tbsp grated Parmesan cheese (for topping)

Cook the pasta according to the package instructions, minus 2 minutes to the end of cooking time indicated. Add the cauliflower florets to the same pot 4 minutes before the end of the reduced cooking time.
In another large saucepan or pan, melt the butter over medium heat. Add in the flour and stir quickly until well combined. Cook for 1 minute, then whisk in the milk gradually.
Cook the sauce for 3-4 minutes until it thickens. Add dijon mustard and cheddar cheese, then remove from heat.
Drain the pasta and cauliflower, add them to the pan with the cheese sauce. Mix well and transfer to a baking dish, spreading it.
Sprinkle Parmesan cheese on top.
Bake in the oven at 180°C (356°F) for 10 minutes or until the top is golden brown.
Serve immediately.
