Cauliflower Mac 'n' Cheese

Ingredients
- 3 1/2 cups (about 200g) macaroni or other pasta such as penne
- 2/3 medium head of cauliflower, cut into small florets
- 2.4 tbsp (33.3g) butter
- 2.4 tbsp (33.3g) all-purpose flour
- 1 2/3 cups (400ml) milk
- 1 tsp dijon mustard
- 1 cup (100g) grated cheddar cheese
- 2 tbsp grated Parmesan cheese (for topping)
Instructions
- Cook the pasta according to the package instructions, minus 2 minutes to the end of cooking time indicated. Add the cauliflower florets to the same pot 4 minutes before the end of the reduced cooking time.
- In another large saucepan or pan, melt the butter over medium heat. Add in the flour and stir quickly until well combined. Cook for 1 minute, then whisk in the milk gradually.
- Cook the sauce for 3-4 minutes until it thickens. Add dijon mustard and cheddar cheese, then remove from heat.
- Drain the pasta and cauliflower, add them to the pan with the cheese sauce. Mix well and transfer to a baking dish, spreading it.
- Sprinkle Parmesan cheese on top.
- Bake in the oven at 180°C (356°F) for 10 minutes or until the top is golden brown.
- Serve immediately.
