If you, like me, love polenta and at the same time have picky eaters in the house who would turn it down, try to make it into fries! Their reaction to them would be very different.

Polenta sticks or fries are great eaten on their own, or maybe dipped in a nice sauce, as a starter or a centrepiece of a snack platter.

Eating polenta this way is So good, you can’t even tell that it’s polenta and your potato fries lovers will Enjoy these polenta fries just as much! Crunchy outside and soft inside! You definitely need to give this recipe a go if you have never come across polenta fries!

Ingredients
Ingredients for about 25 polenta fries
  • - 150gr polenta (yellow cornmeal)
  • - 600 ml water
  • - 2 tbsp extra virgin olive oil
  • - 1 tsp salt
  • - 1 tsp paprika
  • - 1 tsp dry oregano (optional)
  • - 1/3 cup plant based milk
  • - 1 cup breadcrumbs
  • - rosemary
  • - salt
Instructions
Method
Cook the polenta in a saucepan with boiling water. Whisk quickly to prevent lumps. The polenta will absorb the water straightaway.
Remove from the heat and add extra virgin olive oil, plant based milk, salt and oregano if you like.
Pour the mixture into a rectangular baking dish lined with parchment paper and flatten it.
Let it cool down for 30 minutes, then transfer it in the fridge for at least 1 hour.
Once the polenta is cold & firm, slice it into fries.
Brush each slice with a bit of extra virgin olive oil and paprika and coat with the breadcrumbs mixed with dry rosemary and salt.
Cook in the oven at 200 degrees for about 30 minutes. They will be super crunchy! Best eaten warm.
If you have leftovers, just warm them up in the oven for 5 minutes and they will be as good as just baked.
