Forget fast food and make these instead! They are so much better for you and better tasting. These bowls are super healthy and fresh. The mango salsa is so refreshing and adds a nice relief to the heat of the shrimp. I love this meal because it is another super balanced and filling dish but leaves you feeling light yet satisfied.


Shrimp is such an amazing protein and probably the quickest one to cook! They only take1-2 minutes per side and when seasoned well, are so delicious.


For this recipe I used homemade sauces, but store bought works as well.

Ingredients

  • 1 cup of small shrimp or prawns
  • 2 tbsp oil
  • 1 cup brown rice
  • 2 cups veggie stock
  • 1/2 cup arugula
  • 1 mango
  • 1 tomato
  • 1/2 red onion
  • 1 can black beans
  • 2 limes
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 2 tsp paprika
  • 2 tsp cumin
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/4 cup cilantro
  • 1 avocado
For the Homemade Chipotle Mayo
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1 tbsp chili powder
For the Homemade Lime Crema
  • 1/2 cup crema
  • 1 lime for zest & juice
  • 2 tsp salt
Instructions
For the Rice
Bring a pot of the chicken stock to a boil then add the brown rice
Cover and reduce heat to a simmer for approximately 20 minutes, stirring occasionally, until liquid is absorbed
Fluff with a fork before serving
Mango Salsa
Dice your mango, tomato, and red onion then place in a bowl
Add 1 tbsp of olive (or avocado) oil and juice from 1 lime
Add roughly chopped cilantro
Season with salt and mix together
For the Shrimp
Heat oil in a pan
Pat shrimp dry with paper towel and season with all of the seasonings
Add shrimp to the pan, cooking 1 -2 minutes per side until cooked through
Finishing Touches
Fill the bowl with rice
Add arugula, the mango salsa, sliced avocado, shrimp, and rinsed black beans
Top the bowl with chipotle mayo and lime crema
For Homemade Chipotle Mayo
Combine all ingredients in a bowl
Adjust spice level by adding more or less chili powder depending on preference
For the Lime Crema
Combine all ingredients in a bowl
Adjust according to taste
Tips
  • If you don't have crema, substitute sour cream or Greek yogurt
