Ingredients

  • 4 tbsp extra-virgin olive oil, divided
  • ½ cup finely chopped shallots, ~2 shallots
  • 2 garlic cloves, minced
  • 16 oz marinara sauce
  • 3 sprigs thyme
  • Pinch salt
  • ¼ tsp pepper
  • ¼ tsp coriander
  • ¼ tsp crushed red pepper flakes, or more to taste
  • ¾ tsp oregano, divided
  • 1 lb shrimp, peeled + deveined
  • 4 oz feta cheese (omit if dairy-free)
Instructions

Preheat oven to 400°F.
Heat 3 tbsp olive oil in an oven-proof skillet over medium-low heat. Add the shallots and garlic and cook, stirring occasionally, until translucent, 5 to 7 minutes. Do not brown.
Add marinara, thyme, salt, pepper, coriander, red pepper flakes and ¼ tsp oregano. Bring to a boil, then reduce the heat to low and cook, uncovered, stirring occasionally, for 5 minutes.
Remove the pan from the heat and arrange the shrimp in the tomato sauce in an even layer.
Crumble the feta over the shrimp, and then sprinkle with the oregano and drizzle with 1 tbsp olive oil. Bake for 12 to 15 minutes, until the shrimp are pink and just cooked (the cooking time will depend on the size of the shrimp).
Turn on the broiler and broil for 1 to 2 minutes, or until the feta is golden brown in spots. Remove from the oven and garnish with chopped oregano and drizzle with olive oil.
