Seriously this shrimp boil recipe is SO GOOD!!!

It is a ridiculously easy dinner recipe to make and tastes as if you slaved over a stove for hours.

We enjoyed this dish almost every week this summer. And I made it for extended family Labor Day weekend. It was a HUGE hit.

The best part?

There is little to no clean-up. And who doesn’t want that?

Prep work is minimal and it cooks quick. So I added it to my list of easy dinner recipes for family.

Because I love it so much I make it a few different ways.

Yes, you read that right. It’s baked not sauteed.

Some Tips for this Easy Shrimp Boil Recipe

This is high on my easy dinner recipes list because it is pretty simple to pull together.

And it’s not actually boiled. The shrimp is baked in foil packets.

Which makes clean-up SO MUCH EASIER.

And it tastes just as good!

There are a few things I do to make it easy for myself.

If you plan ahead with a shopping trip, most items are easy to prepare within minutes. Look for ingredients that are ready to go.

For example, I buy fresh corn out of the husk. It saves a few steps so the extra few dollars is worth it to me.

And I typically buy frozen shrimp and thaw it before cooking.

  • 1/2 lb shrimp (cleaned and deveined, tail on)
  • 1 lb chorizo sausage
  • 1 onion, rough chop
  • 4 corn on the cob
  • 1/2 bag small potatoes
  • 2 tbsp old bay
  • 4 tbsp butter
  • 4 tbsp extra virgin olive oil
  • chopped parsley (optional)

Preheat oven for 400
Rough chop the onion
Slice chorizo into 1/5s
Halve each ear of corn
Cut 4 large pieces of aluminum foil
Divide all ingredients among each of the foil evenly
Top with 1 tbsp of butter
Top with 1 Tbsp of Evoo
Season with Old Bay
Cut 4 more pieces of alumnion foil
Place on top of the ingredients and close all the edges to seal
Place on baking sheet
Bake for 30-40 min on 400. Make sure potatoes are fully cooked before removing.
Garnish with fresh chopped parsley (optional)
  • Tip Keep Shrimp Tasting Fresh
  • Place shrimp in stock pot
  • Fill halfway with water
  • Add ice
  • Slice 1 lemon
  • Add lemon slices and squeeze some juice into the stockpot
  • Sit for 30 min
  • Rinse and use in recipe.
