As we get closer to Summer, I am thinking on easy dinner recipes that the family can enjoy. Wild Sockeye Salmon is one of our favorite fish to cook at home, specially because of its nutritious value and it is packed with Omega-3s. Also, is the one fish that my Nicky, my picky eater, enjoys with no fuzz. Salmon is so easy to cook, many other favorites are simply seasoned with just add salt and pepper and pan seared in my cast iron pan. You may enjoy it over salad, or turn it into a hearty bowl over white rice or cauliflower rice with veggies.
The ingredients are simple, that you may have on hand. These are:
Ingredients
- 1/3 cup of honey
- 1/4 cup of coconut aminos
- 2 tbsp. Of lemon juice
- 1 tsp. red pepper flakes
- 3 tbsp. extra-virgin olive oil, divided
- 4 6-oz. salmon fillets, pad dry with a paper towel
- Kosher salt
- Freshly ground black pepper
- 3 cloves garlic, minced
- 1 lemon, sliced into rounds
So simply delicious!
You may make this ahead of time and serve cold as well over mix green salad or turn it into a wrap.

Ingredients
- 4 6-oz. salmon fillets, pad dry with a paper towel
- 1/3 cup of honey
- 1/4 cup of coconut aminos
- 2 tbsp. Of lemon juice
- 1 tsp. red pepper flakes
- 3 tbsp. extra-virgin olive oil, divided
- Kosher salt
- Freshly ground black pepper
- 3 cloves garlic, minced
- 1 lemon, sliced into rounds
Instructions
- First pad dry salmon with a paper towel and set aside.
- Then, Mix marinade ingredients (coconut aminos, honey, lemon juice, pepper flakes).
- Season salmon with salt and pepper
- In a hot pan (used cast iron pan) drizzle 2 TBSP of olive oil and cook salmon skin side down for about 5-6 minutes and then flip to the other side and add 1 TBSP of olive oil, add garlic, lemon slices
- After 1 minute add the honey sauce and baste the salmon. Cook for about 3 minutes in low heat.
- It is READY to serve!
- With your choice of rice with white rice, side of mushrooms and green beens.
- I drizzle some garlic chili oil to enhance flavors.
