Baked Salmon Sushi Cups

I recently purchased a case of frozen salmon poke from a very popular bulk foods store however the quality was very disappointing and subpar. It was supposed to be cubed raw sushi grade salmon unmarinated and packaged into one pound packs. I was sadden to discover that instead of cubed salmon, it was all mushy bits salmon that was mostly likely processed from odds and ends of salmon pieces. The texture was just not right for poke. So, I’ve been testing and trying to use up the salmon in all sorts of recipes.


I bet you’ve seen a variation of these baked sushi cups on social media. To be honest, they never really appealed to me before but since I had the salmon on hand I decided to give them a try. It turns out that they are quite fun to eat and the kids really enjoyed them! I noticed that many of the recipes I’ve seen make a spicy mayo sauce however since I am making it for the kids I changed it up. I think these would make a fun appetizer and they are fairly easy to put together!

Ingredients

  • 1 lb cubed salmon
  • 3 tbsps Japanese mayo
  • 2 cloves garlic, minced
  • 1 scallion, finely chopped
  • 2 tbsps Japanese soy sauce
  • 1 tbsp sesame oil
  • 1.5-2 cups sushi rice
  • 1 tbsp seasoned rice vinegar
  • 3 nori sheets
  • furikake
Toppings
  • 1 scallion, finely chopped
  • Japanese mayo for drizzling
  • finely shredded nori
Instructions

Preheat the oven to 400F.
In a medium sized bowl, add in the salmon cubes, mayo, garlic, scallions, soy sauce and sesame oil.
Take 3 full sized nori sheets and cut into 4 squares. Push them into a muffin tray.
In a large bowl, mix the sushi rice with the seasoned rice vinegar. Divide and fill in each nori filled muffin cup with the rice.
Sprinkle the top of the rice with the furikake. Then top it with the marinated salmon.
Bake for 15 minutes. Remove from the oven and drizzle the top with additional mayo, scallions and nori. Serve and enjoy!
