  • 4 cod fillets
  • 1/2 cup panko bread crumbs or regular breadcrumbs
  • 1/4 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 3 eggs large
  • 1/4 tsp black pepper
  • 1 tsp salt
  • Cooking spray
  • Lemon wedges, for serving


Tip 2: I’m adding 2 tablespoons of herbs of Provence. It compliments this fish dish well.

Tip 3: I use Wondra Flour for the flour process. This wastes only a little bit of flour and keeps it a bit neater too.

  • Preheat your oven to 400 degrees F (200 degrees C). Spray a baking tray with cooking spray and set aside.
  • Pat the cod fillets dry with paper towels and set aside
  • Sprinkle the cod filets with salt and pepper
  • In a dish mix together the panko breadcrumbs, Parmesan cheese, and black pepper.
  • Dip each cod fillet into the panko breadcrumb mixture, pressing onto the top of the fish to ensure it sticks.
  • Place the prepared fish fillets onto the prepared baking sheet. Spray the top of the fish with cooking spray to help the coating turn golden brown and crisp.
  • Bake the fish in the preheated oven for 20-25 minutes, or until the crust is golden brown and the fish is flaky and cooked through.
  • Remove the fish from the oven and serve immediately with lemon wedges on the side.

  • 3 large eggs lightly beaten
  • 1/4 cup all purpose flour
  • 4 cod fish fillets
  • 1 lemon quartered
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 cup panko crumbs
  • 1/2 cup parmesan cheese parmesan reggiano or pecorino romano cheese work best

Preheat your oven to 400 degrees F (200 degrees C).
Spray the sheet pan with cooking spray and set aside.
