Making a quiche has been never been easier than using the store-bought puff pastry! This spinach and ham quiche is the perfect brunch or lunch meal. Easy and tasty recipe to make at home on a lazy day!

When I crave for something savoury, I always wanted a quiche. Quiche is a type of French tart made from pastry crust with savoury custard filling. It often fills with cheese, meats and vegetables.


As you all know, I love cooking and baking for my family. However, someday you just had that lazy moment that you simply want a quick meal without spending much effort in the kitchen. This is when my best friend, the frozen puff pastry comes in handy! I always have a packet of the pastry sheets in my freezer as I know I used them quite often.

This quiche recipe is delicious, flavourful and healthy. It loads with protein from the eggs and ham and packs with folate and vitamins from the vegetables. This spinach and ham quiche recipe is incredibly easy to make. As we don’t need to make the pastry dough from scratch, all you need to do is press the ready to make pastry into your pan, fills it with your favourite toppings which is spinach and ham in my version, top with egg mixture and bake! As simple as that!

This recipe could make 8 servings using 2*20cm pie pans.

Ingredients

  • 2 frozen pastry sheets
  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 500g, baby spinach
  • 1 cup peas
  • 150g leg ham, sliced
  • 2 cups shredded cheese of your choice
  • 7 eggs
  • 1 1/2 cup milk or heavy cream
  • 1/4 tsp pepper
Instructions

Preheat oven to 200°C. Grease your pie pan and remove frozen pastry sheets from the freezer and thaw until it is just soft enough but still cold to place on the pan.
Press pastry into the pie pan, folding over and ensure it fits the pan then trims off the excess.
Heat up oil in a pan on medium heat until warm, add onion and sauté for 2-3 minute until soft and brown. Add spinach and cook for 1-2 minutes. As soon as spinach started to wilt, turn off the heat and drain off excess liquid.
In a large mixing bowl, add eggs, milk and pepper. Whisk to combine.
Divide and spread spinach mixture over bottom of the two pie pans. Add peas and ham then sprinkle shredded cheese over the top. Pour eggs and milk mixture on top.
Bake at the preheated oven at 200°C for 25-30 minutes until pastry is golden brown and egg custard are set. Serve warm and enjoy!
