Cheesy Hash Brown Breakfast Casserole hits all the high notes for a warm, satisfying breakfast on a cold winter day. Gooey cheese envelopes sausage and eggs and veggies. It’s delicious straight from the oven, but is almost as good room temperature if you’re serving a buffet. You might even polish off the last bit right out of the fridge. It’s THAT addictive!
This recipe is perfect when you are planning a meal for guests. You won’t need to spend a ton of time in the kitchen. Make this breakfast casserole on family vacation, a girl’s getaway trip or for a big group brunch at home.
WHAT TO SERVE WITH CHEESY HASH BROWN BREAKFAST CASSEROLE?
When serving this casserole for breakfast, fresh fruit and toast go perfectly, but when serving for dinner or brunch a simple green salad is what I prefer.
CAN THIS RECIPE BE MADE AHEAD?
Yes, you can make this recipe the day before you plan to serve it. To make ahead of time, follow the instructions up to placing the casserole in the oven. Cover with foil and store in the fridge overnight. When you are ready to cook the next day, pop in the oven and add approximately 10 minutes to the bake time.
CAN THIS CASSEROLE CAN BE FROZEN? Absolutely!
Make an extra casserole and store in the freezer for up to 3 months. Be sure to freeze in an airtight container or freezer bag.
After thawing in the fridge, place casserole in prepared 9 x 13 dish and follow the baking instructions. It may be necessary to add a few minutes to the cook time.
Freeze any leftovers in single servings for an easy breakfast or lunch that can be rewarmed in the microwave.

Ingredients
- 20 oz Country Style Hash Browns
- 8 Eggs
- 1/2 c Half & Half
- 1 tsp Hot Sauce optional
- 1/2 tsp Pepper
- 1 lb Breakfast Sausage
- 8 oz Shredded Colby Jack Cheese
- 1/2 Diced Onion
- 1/2 Diced Red Bell Pepper
Instructions
- Preheat oven to 350 degrees.
- Brown breakfast sausage.
- Combine all ingredients in a large bowl reserving 1 cup cheese for topping the casserole.
- Place in a prepared 9 x 13 casserole dish. Top with cheese and bake for 45 – 50 minutes or until egg is cooked through.
- Let stand 5 – 10 minutes before serving.
Tips
- Any leftover casserole is good in the fridge for 3 – 4 days and it will be delicious reheated in the microwave.

The potatoes are frozen. Should they be crisped up or half baked before going in the casserole mix?
