Mexican Omelette

Get ready to enhance your regular omelette by adding sauteed peppers, sauteed onions, cheese, and seasoned shredded chicken. Serve it with sour cream, guacamole, fresh lime, cilantro, and/or hot sauce.

I had some leftovers from a chicken fajita dinner and decided to put them to use in my breakfast the next morning. When I make this again, I would add black beans, salsa, and try different types of cheese.

You could make this into a stuffed omelette instead of placing all the toppings on top, but either way it all ends up in your bite!

  • 3 eggs
  • olive oil or butter
  • 1/2 cup shredded chicken
  • 1/2 red pepper
  • 1/4 red onion
  • fajita or taco seasoning
  • cheese to garnish
  • cilantro to garnish

Heat olive oil or butter in a pan
Thinly slice or dice your red pepper and red onion
Add them to the pan and saute until soft
Add your pre-cooked shredded chicken to the pan
Add seasoning and 1-2 tbsps water until the it becomes a sauce then set aside
Whisk your eggs in a bowl then add more oil to the pan
Add your whisked eggs and cook on low heat
Once the egg starts to look opaque, flip it inwards into an omelette shape and let it cook through
Place the egg on a plate then top with your chicken and peppers
Garnish with cilantro and cheese
Serve with salsa, guacamole, or sour cream
