“Heirloom 🍅 🧄 Confit & Burrata”

Join me in making this crazy delicious and simple recipe to serve as an appetizer with burrata and crispy toast or turn it into a main dish mixing it with your favorite pasta.


As we approach the beginning of Spring in March, the tomatoes are getting riper and sweet. I love using the heirloom tomatoes because of the different colors it brings to this dish. The roasted garlic is key as it gets creamier and sweater.



Here are the ingredients to this decadent dish:

1 lb heirloom tomatoes

1 head of garlic

1 rosemary sprigs

1 tsp of TJ’s sofrito seasonings or italian seasoning salt free

1/4 cup of extra virgin olive oil

Salt & pepper to taste

(Crushed pepper optional)

2 burrata balls

Q ciabatta bread cut into slices


Pre- heat oven at 350 degrees, prep the tomatoes and cut into halves if they are big. Add the tomatoes, garlic, seasonings and olive oil into a baking dish. Bake for about 30 minutes. Remove and mash the tomatoes and garlic and pour over the burrata balls. Serve warm@with toasted ciabatta bread. Simply delicioso!
