Because let’s be real – we are all there for the dessert.


I have seen several “healthified” 7 layer dip recipes circulating the world wide web, but they always seemed to be over-simplified or 7 layers that were really more like 3 if you know what I mean.


I wanted to come up with something that really packed a fresh, nutrient-dense punch without sacrificing flavor or texture.


Let’s just say this recipe gets eaten VERY quickly every time (and then dessert tastes SO much better)!

Ingredients

  • 15 oz roasted red pepper hummus
  • 12 oz Tzatziki sauce
  • 1 c packed spinach, chopped
  • 1 medium cucumber, diced
  • 1/4 c scallions, diced
  • 1 c cherry tomatoes, diced
  • 4 oz feta cheese
  • sliced cucumbers for dipping
  • pita chips for dipping
  • carrot chips for dipping
Instructions

Spread the hummus on the bottom of a pie dish.
Spread the Tzatziki sauce over the hummus.
Layer the chopped spinach over the hummus.
Add the scallions to the spinach.
Layer the cucumber over the spinach/scallions.
Add the tomatoes.
Top with the feta cheese.
Serve immediately or refridgerate until ready to serve. Serve with pita chips, sliced cucumbers, and carrot chips!
