It would not be spring without a fun spring brunch board! These are fun to do because you can highlight whatever you have on hand in terms of produce. As far as dips and accoutrements such as hard-boiled eggs, cream cheese dips, and pickled onions, you can do so much of these ahead of time which saves on the morning you are wanting to serve the brunch board.


For mine, I had bagels, homemade cream cheese dips, smoked salmon, hard-boiled eggs, avocados. I have provided recipes for the cream cheese dips below if that interests you to try out. I decorated my board with some pretty kale and fresh flowers as well. The sky is really the limit with brunch boards. You can differentiate between sweet (fruit and danish heavy) or savory (meats, eggs, dips, veggies, etc). I would love to hear how it goes for you!

Ingredients
Brunch Board
  • 6-8 Bagels
  • 8-12 oz smoked salmon (I tried two varieties)
  • Sliced avocados
  • Hard-boiled eggs
  • Cream Cheese Dips
  • Pickled Red Onion
  • Sliced Tomatoes, red onions, cucumber, lemon wedges
  • Fruit salad (optional)
  • Floral and Kale decoration (optional)
Pickled Red Onion
  • 1 small red onion
  • 1 C apple cider vinegar
  • 1 C water
  • 1/6 C granulated sugar
  • 1 Tbsp salt
Herb Cream Cheese Dip
  • 8 oz cream cheese, softened
  • 2 tsp fresh dill, diced
  • 2 tsp fresh parsley, diced
  • 2 tsp fresh basil, diced
  • 2 green onions, diced
  • 1 tsp dehydrated onion pieces
Instructions
Herb Cream Cheese Dip
Slightly warm the cream cheese and dice the fresh herbs. Stir in the onion and combine. Keep in the fridge until serving
2 tsp fresh dill, diced
2 tsp fresh parsley, diced
2 tsp fresh basil diced
1 tsp dehydrated onion pieces
Pickled Red Onions
Slice red onion thinly, and place into deep jar
Bring vinegar, water, sugar, and salt to a simmer in saucepan.
Stir until sugar and salt have dissolved, about 1-2 minutes
Let cool slightly and pour over onions
Make sure onions are entirely covered by liquid
Let jar come to room temp and refrigerate, covered, for about 3 weeks
Tips
  • Have fun and don't stress about having the perfect ingredients!
  • Try making the cream cheese, pickled onions, hardboiled eggs a day ahead so the day of serving is just mostly plating!
