A luscious single serve soft-baked White Chocolate Macadamia Protein Cookie with a ton of protein powder and no sugar. Healthy white chocolate macadamia nut cookie is low fat and gluten free too!

I usually go for the soft cookies instead of the crispy ones, but this soft baked macadamia nut protein cookie took it to another level. Soft and even fudgy since its just half baked.

Still got that proper cookie flavor though, and a bit too addictive!

Ingredients for Half Baked White Chocolate Macadamia Protein Cookie

This single serve white chocolate protein cookie is made with a few simple and healthy ingredients, and has no flour, butter or oil and no sugar either!

  • Vanilla Protein Powder for healthy, whey protein cookie that’s also sugar free
  • I used HTLT Supps Vanilla Whey-Casein here.
  • Quest Nutrition Vanilla Milkshake is another option.
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit or PB2 too.
  • Coconut Flour for a low carb protein mug cake
  • Almond Butter for the rich flavor.
  • I’d recommend American Dream Nut Butter Bundle up Blondie Almond Butter.
  • Egg Whites for extra protein
  • Unsweetened Almond Milk
  • Baking Powder

And then for the key part, White Chocolate Chips and Macadamia Nuts.

  • 1/4 cup Vanilla Protein Powder, Whey-Casein, 22g,
  • 1 Tbsp Peanut Butter Powder, 6g, see post for subs
  • 1 Tbsp Coconut Flour, 7g
  • 1/2 tsp Baking Powder
  • 1/4 cup Unsweetened Almond Milk, 60ml
  • 1 1/2 Liquid Egg White, 45g, 3 Tbsp
  • 1/2 tsp Almond Butter, 3g
  • 1/4 tsp Vanilla Extract
  • 1/2 tsp White Chocolate Chips, Sugar-free recommended below, 5g
  • 2 tsp Macadamia Nuts, Chopped, 5g

Preheat oven to 350°F and lightly grease a 1 cup ramekin.
In a bowl, whisk protein powder, peanut butter powder, coconut flour and baking powder.
Add almond milk, egg whites, almond butter and vanilla, and stir until combined. Batter should be smooth.Taste batter and add sweetener if needed.
Fold in white chocolate and macadamia nuts.
Pour batter into ramekin.
Bake for 12-13 minutes. Top should be mostly set, but still slightly wobbly. It will harden when cool.Let cool for a few minutes and enjoy!
  • Taste the batter and see if you need some extra sweetener; I’d recommend stevia if needed.
