Quick Power Balls

When I was in labour, these power balls is all I was dreaming about eating. It is so easy to make, delicious and gives you a great deal of energy.
Put the chestnuts, walnuts, almonds and cashews in the food processor bowl and grind it a little with 4-5 short pulses.
Add the dates and the prunes and process till you get a sticky mix.
If your mixture is too sticky and smears on the sides of the ball, add a few more nuts. If it’s too dry, add an extra date.
Taste the mix. If it’s not sweet enough to your liking, you can add a teaspoon of date honey or maple syrup and mix it some more.
Put unsweetened coconut flakes in a flat pan.
Pull out a small bit of the mix, about the size of 2 teaspoons and create a ball with your palms
Dip it in the coconut flakes and move it a little till it’s completely covered with flakes
Put the ball in a serving dish and continue with the rest of the mix. I like to create several balls at a time.
You can eat it right away or keep it refrigerated for up to a week.
