Hello! Pumpkin recipe number three! We are now to the end of this month's ONE CAN OF PUMPKIN triple recipe fest. As a reminder, all three recipes this month use 1 full can of pumpkin puree so you never have to waste half a can again.

This pumpkin spice chia pudding is jam-packed with flavor and yummy healthiness as well. I love overnight oat and mixing them with chia and fresh fruit and nuts. I like to make a big batch on Sunday which takes me through most of the following week.


I like these cups for breakfast or an afternoon snack. But, I can also see these being wonderful as an autumnal dessert treat as well. Enjoy!

Ingredients
Overnight Oats
  • 3/4 C pumpkin puree
  • 3/4 C plain greek yogurt
  • 1.5 C almond milk or milk of choice
  • 3/4 C old fashioned oats
  • 2 TBSP chia seeds
  • 3 TBSP honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice, plus a pinch more for serving
  • handful pepita pumpkin seeds for serving (optional)
  • handful chopped pecans for serving (optional)
Instructions
Overnight Oats
In medium bowl, stir together milk, yogurt, pumpkin, vanilla, and maple syrup/honey.
Add oats, chia seeds, and pumpkin spice
Make sure to incorporate all the chia seeds into the liquid mixture
Pour into 3 containers and refrigerate at least 4 hours or overnight (overnight is better in my opinion)
Serve with crushed pecans and pepita seeds if desired
Tips
  • Most oats are fine, but steel-cut oats do not absorb as much liquid, so it would not be my recommendation to use this variety.
  • Cooking time says 4 hours but that means RESTING TIME-NOT ACTIVE COOKING.
