Have you tried the social media viral yogurt bark snack yet? This is my version and I really like it, there’s no cook time and it’s super simple to make. The most difficult part of this recipe is having to wait until it hardens. The great thing about this recipe is that you can make it any flavor that you want. You can also add as many toppings as you like, from fruits to nuts and even granola, the options are endless.


I chose to make mine with ceremonial grade matcha and topped it with chocolate chips, pistachios, unsweetened shredded coconut and some agave. The yogurt I used is Fage and it’s a 0% fat unsweetened yogurt, you can use sweetened if you prefer. You can also use a yogurt with fat and it holds up even better and it’s richer in flavor. The non fat held up fine as well but keep in mind, this is a yogurt bark and it does melt fast, just as ice cream does. I also chose to add vital protein collagen powder to the yogurt, to increase the amount of protein.


I think this would be a fun snack for 4th of July, just add strawberries and blueberries to get the red, white and blue vibe going. It’s refreshing and will be a hit for anyone who likes yogurt. This would also be a fun recipe for kids to make. If you make it, I hope you enjoy as much as I do.

Ingredients
For the yogurt bark
  • 1.5 cups fage 0% fat unsweetened yogurt
  • 1.5 tsp ceremonial grade matcha
  • 3 tbsp enjoylifefoods gluten free chocolate chips (or more)
  • 1/4 cup unsweetened shredded coconut (You can use sweetened yogurt as well)
  • 1/4 cup chopped pistachios
  • Agave (to taste)
  • 1 to 2 scoops vitalproteins collagen
Instructions
For the yogurt bark
Line baking sheet with parchment paper and set aside.
In a bowl, combine yogurt, collagen, sifted matcha & stir very well to thoroughly combine.
Transfer yogurt mixture onto prepared baking sheet.
Spread to even thickness onto parchment lined baking sheet or cutting board.
Top with chocolate chips, shredded coconut, and pistachios.
Drizzle agave over the entire surface of the yogurt.
Freeze for 3 hrs or best if over night (until frozen).
Break into pieces, store in glass container in freezer. ENJOY!
