Is it too late to still be posting pumpkin recipes? This is one I made a while back but never shared on there before, and as it's still winter it's never too late to share some more comforting flavours.


If you know Italian food you will know what panna cotta ( which literally traslates to "cooked cream") is. This is a twist on the classic, introducing pumpkins and some spices to make it extra comforting and and delicious. It's also super quick and easy to make, it just needs some time in the fridge to set, so anyone can make it for a fun dessert for the whole family.

Ingredients

  • 7oz pumpkin purée (you can buy the tinned ready-made one or roast a pumpkin and blend the flesh)
  • 5/6 cup heavy cream
  • 1 gelatine sachet (12g/0.4oz)
  • 8 tbsp milk
  • 1/4 cup caster sugar
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg or ground cloves
  • 1 tsp cinnamon
Instructions

In a small pot, heat up the milk and pour in the content of the gelatine sachet whilst cooking on low. Mix well to dissolve it and then turn off the heat. Set it aside.
In another small pot, heat up the pumpkin, cream, sugar and spices and bring to the boil whilst mixing.
Once it reaches boiling point, take off the heat.
Place a fine-mesh sieve on top of the pumpkin mixture and strain the gelling agent into it, stirring well.
Pour into 4 ramekins and place in the fridge to set for at least a couple of hours. Enjoy straight from the fridge with a spoon.
