This Burrito in a Cup is a really tasty and very easy recipe! It's inspired by a dish from an old cookbook I had. In the cookbook, the recipe did not include specific amounts of ingredients—it just listed the ingredients to layer in a paper cup. So I decided to use small glass canning jars and I came up with specific amounts of each ingredient to use, making this recipe much easier to follow! :)

You just can’t go wrong with a convenient meal like this…it’s quick, doesn’t involve any cooking because you’re using leftovers, and extremely easy to put together. Keep this in mind the next time you need a super-simple meal!

Ingredients

  • Six (6-oz) canning jars 
  • 2 cups leftover black beans (reheated)
  • 1 1/2 cups leftover taco meat, reheated
  • 1 1/2 cups shredded Fiesta blend cheese, plus a little more for sprinkling on top
  • 3/4 cup salsa
  • 6 Tbsp. sour cream
Instructions

Arrange six (6-oz) canning jars in a row, making it easy to fill with ingredients.
Add 1/3 cup black beans in the bottom of each jar.
Layer 1/4 cup taco meat over the beans in each jar.
Next, layer 1/4 cup shredded Fiesta blend cheese over the taco meat in each jar.
Top the cheese in each jar with 2 Tablespoons of salsa, and a dollop (about 1 Tablespoon) of sour cream.
If desired, sprinkle a little more shredded cheese over the sour cream.
