Eggs Benedict - Hannukah Edition

Did you make or buy too many latkes for Hannukah this year? Or do you just love potato pancakes & hashbrowns? Then this is the recipe for you! This delicious breakfast consists of potato pancakes, some sour cream or yogurt, meat, and eggs. It's the perfect way to use up those holiday leftovers.


If you're feeling fancy, you could even add or substitute a hollandaise sauce instead of the garlic yogurt used in the recipe below. Feel free to add cheese, or substitute the meat to match your preferences.

Ingredients

  • 2 pre-cooked latkes or hashbrowns
  • 3/4 cups Greek yogurt
  • 1 garlic clove
  • 2 eggs
  • 4 pieces of smoked meat
  • chives to garnish
  • paprika to garnish (optional)
  • salt & pepper to taste
Instructions

Bring a pot of water to a simmer or slight boil
While the water heats, combine the yogurt with 1 minced clove of garlic and salt & pepper then set aside
Add the eggs to the water and poach to your preference then set aside on a paper towel lined plate to soak up any water
Heat the latkes then add the garlic yogurt, meat, and poached eggs
Garnish with paprika & finely sliced chives
