Need a quick and easy breakfast or maybe you are looking for a new snack? Seeing all the hype about cottage cheese these days? Do you love avocado? Here is the perfect recipe! I love having this delicious sweet loaded avocado toast after going to the gym, in the morning for breakfast or just when I am looking for a snack to get me through the day! A great dish to quickly put together in a crunch without compromising on flavor, protein or fats! I like to use store bought bread, but if you have home made bread, that works too! Let’s get toasting!

Ingredients
For the toast
  • 2 tablespoons of cottage cheese (I used 2% fat)
  • 1/2 of an avocado (make sure it is ripe!)
  • 1 slice of toast (I used multigrain, but can substitute for your favourite bread! Sourdough is always great too)
  • 1 teaspoon of hemp seeds
  • A pinch of salt
  • 1 teaspoon of honey (can adjust for your desired level of sweetness)
Instructions

Start by taking a plate and your toasted slice of bread. 
Spread the cottage cheese evenly on your toast using a butter knife. 
Next, slice your ripe avocado and spread it across the toast with your butter knife. You want to ensure that the avocado smoothes out evenly over the cottage cheese to make sure that each bite taken upon completion will have some avocado on it.
Take your honey and gently drizzle it over your toast.
Take a pinch of salt and sprinkle it over your toast.
Lastly, top your toast with hemp seeds, spreading it evenly across the top.
Tips
  • Can swap the honey for maple syrup as well! Hot honey would also be good for a bit of a kick!
