Raspberry Peach Bellini

Bellini’s are a classic refreshing summer drink that is great after dinner on a warm summer night or at brunch with your girlfriends. Let’s be real. Any time is a good time for a bellini!

This yummy recipe is so easy to make. You need two ingredients. Canned peaches and sparkling raspberry wine. To make things simple on the day of your party, prep the peaches in the freezer the night before so that they are frozen and ready to go when it is time to start mixing drinks.

Frozen peaches and fresh raspberries

Start by taking the canned peaches and draining the sweet syrup inside. Save it in a cup and put it in the fridge. Freeze the peaches for several hours in a Ziplock bag. It takes about 2 hours for the peaches to freeze. You can also buy frozen peaches and instead mix them with simple syrup.

Once you are ready to make the Bellini's take the frozen peaches and syrup and blend them together in a blender or food processor. Then gently pour in the sparkling raspberry wine until it's a nice slushy consistency.

Add fresh ripe raspberries as a garnish right in the drink or skewered on a toothpick.

Pour into your glasses and garnish with fresh raspberries and peaches.

Ingredients
Raspberry Bellini
  • 1 16 oz can of peaches in syrup
  • 1 bottle of raspberry wine
  • Raspberries for garnish
Instructions

Open the can of peaches drain the syrup and set it aside in the fridge.
Take the peaches and put them in a ziplock bag in the freezer for 2 hours or until frozen
Once the peaches are frozen remove them from the freezer and blend them with the syrup in a blender or food processor
Pour the frozen peach and syrup mix with 2 oz of raspberry wine in each glass.
Give it a little swirl with a spoon or stir stick
Makes 4 drinks.
