Slow Cooker Low FODMAP Taco Soup

Who's ready for another easy comfort food recipe?! I know you're all raising your hands right about now and this slow cooker low FODMAP Taco Soup is going to be your new favorite go-to recipe. I meal prepped this for my lunches this week and right away my husband was like "TACO SOUP?! WHAT?! You better have made enough for me!!!" which, honestly I anticipated so of course I made enough for us both! He's usually a sandwich guy when it comes to lunch, but I know his love for Mexican inspired food runs deep, so I'm totally not surprised by how fast he's been gobbling up this slow cooker low FODMAP taco soup!


I used my favorite low FODMAP broth in this recipe which made it ten times easier. I ran out of my homemade bone broth and haven't had the chance/enough scraps leftover to make more so I'm super happy I stocked up and had a few pouches on hand.


You might be wondering why there is corn in this soup and if that's low FODMAP friendly. Two things. 1. Yes, according to Monash University corn is low FODMAP friendly at just over 1oz, or 2 tbsp. This entire recipe makes 8 servings, so if you were to use one cup of corn, your slow cooker taco soup will be low FODMAP friendly with only 2tbsp of corn per serving. However, if you're in the elimination phase or know you don't tolerate corn, skip it! You can add other veggies like butternut squash into the mix instead. Don't do well with tomato? Sub out the fire roasted tomatoes for canned pumpkin + add some additional veggies in if you wish.


Serve this slow cooker low FODMAP taco soup just as you would chili, with a dollop of lactose free sour cream, some shredded cheddar cheese, and a whole lotta grain free or gluten free tortilla chips! This is a meal the whole family will love!

Ingredients

  • 1.5 lbs ground beef
  • 1 tbsp cayenne
  • 2 10oz cans fire roasted tomatoes and chilies*
  • 2 cups low FODMAP chicken broth
  • 1 can black lentils, drained + rinsed
  • 1 medium red pepper, diced
  • 1/2-1 cup frozen fire roasted corn**
  • 1 c frozen butternut squash
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 jalapeño, chopped + deseeded
  • optional: lactose free sour cream + shredded cheddar for topping
Instructions

In a large skillet over medium high heat, brown ground beef with 1 tbsp cayenne pepper.
Once beef is done browning, add to the basin of a slow cooker, adding in all ingredients on top of it.
Give the soup a stir to ensure all ingredients are fully incorporated + cook on high for 4 hours.
Serve with lactose free sour cream and cheddar cheese.
Tips
  • *If you're not a fan of super spicy foods, look for the mild versions or substitute for fire roasted tomatoes without chilies. **Omit for Paleo
