Roasted Fennel and Pears With Green Goddess Vinaigrette
Have you ever tasted ROASTED FENNEL & PEARS 🍐 If you haven’t and you enjoy both, you need to try this recipe.
Fresh fennel has a very distinctive taste of anise or licorice and can be pungent for some people. Me on the other hand, loves it anyway. If you haven’t tried it roasted, you need to give fennel another chance. It tastes sweet, fresh, and delicious. I used them in this delicious salad that I topped with pan fried pistachio crusted halibut, oh my goodness it was delish! For the dressing, I made a light vinaigrette using my green goddess dressing recipe, which I’ve posted here on Foodtalk Daily. If you don’t feel like making homemade green goddess dressing, you can choose to use any dressing you’d like. Trader Joe’s has one that I used to use frequently until I started making my own.
The roasted fennel and pears can be eaten alone, as a side dish or used to garnish your favorite salad or mixed greens.

Roasted Fennel and Pears With Green Goddess Vinaigrette
Recipe details
Ingredients
For the fennel and pears
- 2 whole fennel bulbs, sliced in wedges
- 2 pears, sliced in wedges
- 2 to 3 tbsp avocado oil
- Aleppo chili to taste
- Italian seasoning to taste
- Salt & pepper to taste
For the greens goddess vinaigrette
- Zest of 1 lemon
- 1/2 juice of 1 lemon
- 1 tsp of finely chopped fennel greens
- 2 tbsp of green goddess dressing
Instructions
For the fennel & pears
- Combine all ingredients in a bowl.
- Mix to combine well.
- Place on parchment lined cookie sheet.
- Bake at 400° F for 35 minutes.
For the green goddess vinaigrette
- Pour all ingredients into a jar
- Shake well & drizzle over the roasted fennel and pears.
- Enjoy!
Tips
- If you don’t want to make homemade green goddess dressing, use any other store bought green goddess dressing or use dressing of choice.
