Sugar Cookie Mug Cake – All the Nostalgia


This recipe brings back memories of baking with my Easy Bake Oven as a child.

One of my favorite treats to make with that set was a single serving sugar cookie.

Mixing up that little packet with water to make the batter, pouring it into the tiny pan, and “baking” it with a light bulb is one of my favorite childhood memories.

While it’s fun to bake up a whole batch of sugar cookies, sometimes you want a quick treat without taking out all the trays and dishes and using the oven.

This sugar cookie mug cake is soft and buttery, and goes great with a glass of milk, or a mug of coffee or tea.

And it takes even less time to make than the Easy Bake Oven version. 🙂


Sugar Cookie in a Mug Ingredients


This is what you’ll need to whip up this mug cake:

🧁 egg yolk

🧁 sugar

🧁 butter

🧁 flour

🧁 vanilla extract

🧁 Optional: sprinkles

You can use any kind of granulated sugar you like – regular white, brown, coconut sugar, erythritol, etc.

In these photos, I used regular white sugar.

If you use a darker-colored sugar, your sugar cookie mug cake will come out darker than mine in the pics.

Also there is a range of sugar called for in this recipe – between 1 and 2 tablespoons. I find it sweet enough with 1 tablespoon but you might like it a bit sweeter. If you know you have a sweet tooth, try with 1.5 or 2 tablespoons.

You can make this sugar cookie mug cake without an egg by substituting 2 tablespoons of any kind of milk for the egg.

Then follow the rest of the recipe as is.

Sugar Cookie Mug Cake with No Butter


If you want to make a version of this sugar cookie mug cake without butter, I would highly recommend using this vegan butter brand as an alternative.

To give sugar cookies that iconic sugar cookie taste, vanilla and butter are two really important ingredients to include.

Earth Balance is the best dairy-free substitute for butter hands-down. I tested tons of alternatives when I ran my vegan bakery, and this was my favorite and my customers’ favorite.

You can substitute with another type of margarine if you’d like but the flavor will be different.

I don’t recommend using a butter replacer like applesauce or mashed banana in this mug cake recipe, because it won’t taste like a sugar cookie anymore.

Ingredients

  • 1 egg yolk
  • 1-2 tbsp white sugar (depending on how sweet you want it)
  • 1 tbsp melted butter (or vegan butter or margarine)
  • 2 tbsp flour (white flour, whole wheat flour, gluten-free all-purpose flour mix)
  • 1/8 tsp vanilla extract
  • Optional: 1 tbsp sprinkles
Instructions

1. Mix together in a small bowl the melted butter and the sugar. 2. Stir in the egg yolk and vanilla.3. Add the flour and sprinkles and stir until it comes together.4. Put the sugar cookie dough into a mug (these are my favorite mugs!).5. Microwave for 45 seconds on high and check for doneness.6. If it needs a bit more time (you want it gooey but not raw), add 10 second increments until done.7. Dig in or top with vanilla ice cream, or whipped cream and more sprinkles!
