Ingredients


1 cup unsalted butter at room temperature

2/3 cup and 3 tablespoons granulated sugar

2 cups and 1 tablespoon all-purpose flour

2 teaspoon vanilla

Pink Sandy sugar sprinkles

Blue, green, and red food coloring (optional)


Preheat oven to 325 degrees. On a baking sheet with line parchment paper.


In a medium bowl beat together butter and sugar until combined. Use a handheld electric mixer or stand mixer.


Add the flour and blend well, then lastly the vanilla. I cut the dough into 3 parts and added 1 drop of red food coloring for pink, 1 drop of green, and 2 drops of blue.


I used a small spoon to scoop the dough for blue cookie dough and a medium spoon for larger cookies. Roll the dough into 1-inch for small ones, and 2-inch balls for larger cookies with your hands and place on a baking sheet.


Gently press down on the balls to flatten with your hand or glass. Sprinkle with sandy sugar.


Bake for 13 minutes or until you see them slightly golden around the edges.

Remove from the oven and let rest on the baking sheets for at least 15 minutes or until completely cooled.

I have to say this is the easiest recipe I ever made, because I’m no baker. I always have my girls help me when it comes to baking, but this one I was able to do all my myself. Very proud of myself that I’m able to share an easy recipe with everyone. Hopefully you will love this, I’m not a fan of food coloring but this taste amazing, but you can skip the food coloring part and just use the sandy sugar sprinkles.
