A big Oreo stuffed Peanut Butter Protein Cookie with good flavor and nutrition! A healthy single serving Oreo stuffed peanut butter cookie with no butter or sugar and made using oat flour.

Oreo and peanut butter is just such a good combination, it had to go in this cookie.

Proper peanut butter flavor, and that big Oreo surprise in the middle, but all of this low fat and low sugar too!


Ingredients for Oreo Stuffed Peanut Butter Protein Cookie Recipe

This healthy Oreo stuffed Peanut Butter Protein Cookie recipe has just a few simple ingredients, no butter or oil and no sugar either! A great gluten free protein cookie recipe too.

  • Oat Flour
  • Vanilla Protein Powder for healthy, whey protein protein cookie that’s also sugar free
  • I used Quest Nutrition Vanilla Protein Powder.
  • Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe. Quest Nutrition whey-casein again here.
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit or PB2 too.
  • Creamy Peanut Butter; I recommend American Dream Nut Butter since it’s higher in protein and lower in fat. This link gives you a discount
  • Unsweetened Applesauce for a soft cookie without butter
  • Non-fat Greek Yogurt contributes to the oil-free part of these protein cookies since it adds the moisture, and also extra protein
  • Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.

Ingredients

  • 1 Tbsp Oat Flour, 11g, see post for subs
  • 2 Tbsp Vanilla Protein Powder, Whey-casein, about 11g
  • 1 Tbsp Unflavored Protein Powder, Whey-casein, 5g
  • 1 1/2 Tbsp Peanut Butter Powder, 9g
  • 1/4 tsp Baking Powder
  • 2 Tbsp Non-fat Plain Greek Yogurt, 28g
  • 1 1/2 Tbsp Unsweetened Applesauce, 22g
  • 1 Tbsp Unsweetened Almond Milk, 15ml
  • 1 tsp Creamy Peanut Butter, 5g
  • 1 Oreo Cookie
Instructions

Preheat oven to 350°F and line a baking sheet with parchment paper.
Combine all the dry ingredients in a bowl – oat flour, vanilla protein powder, unflavored protein powder, peanut butter powder and baking powder.
Add Greek yogurt, applesauce, almond milk, peanut butter and mix.
Transfer ½ cookie mixture onto baking sheet, spread with spoon and shape into 4-5” cookie.Place Oreo cookie in middle.Cover with remaining mixture, top with more crushed Oreo.
Bake about 13-15 minutes – top should be cooked and dry to touch.Let cool for a few minutes and enjoy!
