I’ve been wanting to make a different version of the popular Oatmeal Scotchies cookie for some time now, and finally had a chance to make them! These Pumpkin Oatmeal Scotchies have pumpkin puree added in, so they’re great for pumpkin lovers and oatmeal lovers! These are soft, chewy cookies and the butterscotch chips make them even more yummy!

These cookies are also flavored with favorite fall spices like cinnamon, cloves, and ginger. So they make a perfect holiday treat!

Have them for a snack or for dessert—and maybe they could even work as a breakfast cookie, since they’re made with three cups of oatmeal!

Ingredients

  • 1 1/3 cups all-purpose unbleached flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 3 cups quick or old-fashioned oats
  • 1 (11-ounce) package butterscotch chips
Instructions

Preheat oven to 375˚F. Line 2 cookie sheets with parchment paper; set aside.
In a medium-size bowl blend flour, baking soda, salt, cinnamon, cloves, and ginger; set aside.
In a large bowl, blend butter, granulated sugar, and light brown sugar together until creamy.
Mix in eggs, then stir in the pumpkin puree and mix everything together.
Stir the flour mixture gradually into the butter/sugar/pumpkin mixture in large bowl, mixing everything until combined.
Fold in the oats and butterscotch chips.
Drop by rounded Tablespoons onto prepared cookie sheets, spacing 2 inches apart.
Bake at 375˚F for 10 to 12 minutes, or until cookies are set and edges lightly browned.
Cool cookies several minutes on baking sheet, then remove to a wire rack to cool completely.
