Peanut Butter Cup Protein Balls

If you have been following along with my recipes, you might guess that protein oat balls are one of my favorite snacks! I definitely have a big sweet tooth so they are always nice to have on hand in the fridge for a quick grab and go snack. Flavor options are limitless when it comes to protein balls, but this peanut butter cup version has to be my new flavor obsession. Chocolate and peanut butter is already an iconic duo alone, but level up by adding chopped up peanut butter cups AND melted chocolatey peanut butter drizzle? There is really nothing better.

Ingredients
For the balls:
  • 1 cup oats
  • 1 scoop vanilla protein powder
  • 1 scoop chocolate protein powder
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup 
  • 1 Tbsp hemp seeds
  • 1 Tbsp flax seeds
  • 1 Tbsp chia seeds
  • 3 peanut butter cups, chopped
For the drizzle:
  • 1 Tbsp chocolate chips
  • 1 tsp peanut butter
  • 1/2 tsp coconut oil
Instructions
For the balls:
Mix all of the ingredients for the protein balls together.
Roll into balls and place on a sheet pan.
For the drizzle:
For the drizzle, melt together chocolate chips, peanut butter, and coconut oil.
Drizzle over protein balls.
Chill the protein balls until the drizzle is set.
Store in the fridge!
