These delicious cookies are always a hit. My friends always finish them off straight away. These beautiful cookies can take any setting to the next level. Being so aesthetic, they brighten up any table (little do they know the cookies are so easy to make!) My favorite part of these cookies has to be the icing. Its delicious, unique and the perfect compliment both in looks and taste to the cookie itself. Store these cookies in an airtight container, placing a sheet of parchment paper between each level of cookies in the stack, so as not to ruin the icing. Happy baking!

Ingredients
Cookies
  • 250 g unsalted butter
  • 120 g white sugar
  • 1 egg, room temperature
  • 1/5 teaspoon vanilla extract
  • 1/2 tablespoon fresh thyme leaves
  • 2 teaspoons lime juice
  • 2.5 cups all purpose flour
Icing
  • 2.5 cups icing sugar
  • 7 tablespoons lime juice
  • thyme sprigs for decoration (optional)
Instructions
Cookies
In a medium sized mixing bowl combine the butter with the sugar, egg and vanilla using a wooden spoon. Add in the thyme and lime. Once well combined, add in the flour gradually.
Cover the mixture with cling (plastic) wrap and refrigerate for at least 2 hours (up to 12 hours).
Once the dough has hardened. Preheat the oven to 180 degrees Celsius (355 degrees Fahrenheit), and prepare two baking sheets with parchment paper.
Roll the dough into a log and use a cutting knife to slice the dough into 1cm (1/3 inch) sized pieces.
Lay the cookies onto the baking sheets and let them bake for around 13 minutes, or until they begin to brown at the edges.
Icing
While the cookies are baking, prepare the icing. In a small bowl, combine all the ingredients until well mixed in. Add in water 1 teaspoon at a time if the icing is too thick until desired consistency is reached.
Drizzle icing onto cookies once they have cooked down, you can use the back of a teaspoon to smooth the icing around.
Add a small sprig of thyme onto each cookie (optional).
