We are often skeptical about ‘healthy’ versions of recipes because most often we just want the real thing in all its calorific glory (calories aren’t always the devil). However, sometimes we are pleasantly surprised when something healthier still tastes great. These were a little experiment to see if we could create some brownies that were a little less packed with sugar but still tasted really, really good. And they did!


So these are our slightly healthier than normal brownies… that still become unhealthy if you eat 10.

Ingredients

  • 45g Oats
  • 35g Coconut Flour
  • 100g Dates
  • 130g Butter
  • 100g Dark Chocolate
  • 2 Tbsp Cocoa
  • 1 Tsp Baking Powder
  • 3 Eggs
  • 1 Tsp Vanilla Extract
  • 1 Tbsp Milk
Instructions

Preheat the oven to 200C. Line a 20x20 brownie tin.
Put all dry ingredients and dates into a food processor and blitz until oats are like powder and dates are chopped.
Melt chocolate and butter together either in the microwave or on the hob and then set aside.
Whisk eggs until light and fluffy, then add remaining wet ingredients.
Add dry ingredients to the wet mixture and mix until the texture starts to look fudgy.
Put into a brownie tin and pop into the oven for between 15-20 minutes. The middle should be a little bit wobbly when you remove from the oven (this will ensure you have that nice gooey brownie texture).
