Coconut Flour Brownies
This Valentines Day, we decided to stay in & bake some coconut flour brownies! These are minimal ingredient, low sugar, & delicious 😋 As much as I love regular brownies, the high sugar upsets my stomach too much so I prefer making them on my own to control the ingredients. I ate 4 of these homemade coconut flour brownies & had zero GI problems after.
A tip on desserts- replace "raspberry frosting/cream" with just plain raspberries! They are naturally sweet, add some extra texture, & organic.
These are super easy & tasted amazing! I could barely tell the difference from the brownie box recipes.

Ingredients
Coconut Flour Brownies
- 4 eggs
- 6 tbsp coconut flour
- 1/4 cup maple syrup
- 1/3 cup coconut oil
- 1/3 cup cacao powder
- 1 tsp vanilla
- Handful dark chocolate chips
Raspberry topping
- 1 cup frozen raspberries
- 1 tbsp honey
Instructions
Coconut Flour Brownies
- Preheat oven to 350
- In a mixing bowl, mix all ingredients listed (except the chocolate chips) until there are no lumps
- Mix in the chocolate chips
- Pour mixture in a 9x9 baking dish and bake for 25 minutes
- Let brownies cool. In the meantime, heat frozen raspberries in the microwave for 2 minutes
- Strain raspberries. Mix strained raspberries with 1 tbsp honey for extra sweetness (optional) then place on top of brownies
Tips
- Raspberry topping is optional, add another fruit, peanut butter, whipped cream, or eat plain
- Use parchment paper for baking dish and be sure brownies are cooled before removing from parchment paper
