Brookies
Yes, you read that correctly, half chocolate fudgy brownie and half cookie equals a Brookie! The variations of this are endless, just think of all the kinds of brownies and cookies and then how they’d be together! In addition, this recipe can be made entirely with homemade doughs, box mixes, premade (refrigerated) dough or a mix of them which I chose here because it’s what I had on hand and was craving these!
And this is what you get when you mix brownie and cookie dough, a delicious ratio perfect bar!
I started by making the brownies, in a large mixing bowl, soften 3/4 cup of butter
Add 1 1/2 cups sugar
Add 3 eggs
One tsp vanilla extract
And 2/3 cup of unsweetened cocoa powder,
1 cup flour
And 1/2 tsp baking powder, mix well until all the ingredients are combined
Line a 9x13 pan with parchment paper overhanging at two edges, this will make it easier to lift out of pan
Spread the brownie layer in pan
I told you this recipe is very adaptable and instead of making a cookie dough I happened to have this on hand and decided to use it, I prepared it with the instructions on package
1 stick of softened butter and one egg, mix well
Then I spread that all on top of the brownie mixture
Bake at 350 for 25-30 minutes or until a toothpick comes out clean when you test in the middle
cool Completely and slice into squares.

For the brownie layer
- 3/4 cup butter softened

For the cookie layer
- 1 bag mix of chocolate chip cookie mix
- 1 stick of butter softened
- 1 egg
Instructions
To make the brownie layer
- Preheat oven to 350
- line a 9x13 pan with parchment paper
- mix all brownie ingredients together and spread evenly in pan
For the cookie layer
- use instructions on bag to make the dough, in this case it was to mix 1 stick of softened butter and 1 egg to the mix
- then spread the cookie dough over the brownie layer
- bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean
- cool and cut into squares
Tips
- Use refrigerated dough if you’re short on time!
