Almond Flour Brownies

Last time it was black bean brownies, this time it’s almond flour brownies! I’m sure a lot more of you will be willing to try these ones out. I had my family try these and they loved them especially because of how fudgy they were from using the organic almond flour! Although they look grainy, these fudgy brownies are perfect along with some vanilla ice cream for dessert. Please note that these brownies will not harden as normal brownies do at once, they will harden once they have been removed from the oven and have had a chance to cool down. Ingredients

  • 3/4 cup + 1 tbsp unsweetened cocoa powder
  • 1 + 1/3 cup almond flour
  • Pinch of salt
  • 1 cup granulated sugar
  • 1/2 cup date or brown sugar
  • 3 flax eggs
  • 1 tsp vanilla extract
  • 3/4 cup coconut oil (melted)
  • 1 cup chocolate chips
Instructions

Preheat the oven to 350F and line an 8x8 inch pan with parchment paper.
Using a sifter in a medium bowl, sift together the cocoa powder and salt. Mix in the almond flour.
In a separate bowl, mix together the remaining ingredients (except the chocolate chips) until just combined.
Mix in the almond flour mixture to the wet mixture until just combined and fold in the chocolate chips.
Spread the batter evenly in the prepared pan and bake for 25-30 minutes. Note that these brownies will still be slightly moist in the middle as the fats from the almond flour are released when baking. The brownies will harden once removed from the oven. Enjoy!
