This is the time of year for pumpkin-flavored sweets, right? Like these easy-to-make Pumpkin Spice Bars! This is a “cake mix” recipe, so you’ll need a box of Spice cake mix and some other simple add-ins like butter, brown sugar, pumpkin puree, eggs, a little vanilla extract and milk, and some white chocolate chips. All these ingredients combine to make these cake-like bars moist and yummy!

The white chocolate chips give these bars a nice extra touch of sweetness! 

If you’re not a fan of white chocolate, you could substitute milk, semi-sweet, or dark chocolate chips. They’re great with any of those! Serve these bars for dessert or a yummy snack!

Ingredients

  • 1 (15-ounce) box Spice cake mix
  • 1/2 cup butter, melted
  • 1/2 cup packed light brown sugar
  • 1/2 cup canned pumpkin puree
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 Tablespoons milk
  • 1 cup white chocolate chips
Instructions

Preheat oven to 350˚F.
Grease or spray a 9 x 13″ pan, or line with parchment paper; set aside.
In large bowl, mix the dry cake mix, melted butter, brown sugar, and pumpkin puree.
Add in the eggs, vanilla, and milk, stirring everything well, then mix in the white chocolate chips.
Spread batter in prepared pan and bake at 350˚F for 25 to 28 minutes, until toothpick inserted in center comes out clean.
Remove from oven and cool completely, then cut into squares.
