A delicious treat


Now that Christmas is approaching, it's time to bring out the pecans! This was my first time making pecan bars and wow they are my new favorite dessert. This version is made with healthier ingredients and you can whip them up in under an hour. You will surely impress your guests at Christmas dinner if you make these!


Ingredients in pecan bars

You will about 2 cups of pecans.




Use ap flour and coconut flour. If you want to make this gluten-free then use almond flour instead of ap.




You will need melted coconut oil, brown sugar or coconut sugar, vanilla and honey or maple syrup.

Ingredients
Crust
  • 1/2Ā cupĀ coconut flour
  • 1Ā cupĀ all purpose flour
  • 1/4Ā cupĀ maple syrupĀ or honey
  • 1/3Ā cupĀ melted coconut oil
  • 1Ā teaspoonĀ vanilla
  • 1/4Ā teaspoonĀ salt
Filling
  • 1/2Ā cupĀ coconut oil
  • 1/4Ā cupĀ maple syrupĀ or honey
  • 2/3Ā cupĀ brown sugarĀ or coconut sugar
  • 1Ā teaspoonĀ vanilla
  • 1Ā tablespoonĀ milkĀ of choice
  • 2Ā cupsĀ chopped pecans
Instructions

Preheat oven to 180 degrees C/350 degrees F.
Line the baking pan with parchment paper.
Grab a mixing bowl and combine the flours, melted coconut oil, honey, vanilla and salt together until a dough is formed.
Add the dough to the baking pan and press down using a spatula.
Bake for 10 minutes.
In the meantime, grab a small pot and melt the coconut oil.
Mix in the sugar, stirring constantly.
Add the honey, vanilla and milk and keep stirring until the sugar melts.
Mix in the pecans.
Once the crust is baked, add the pecan filling on top and bake for a further 15 minutes.
Once ready, refrigerate for at least 2 hours before indulging!
