I’m not sure where the idea for this maple and chocolate protein bar recipe came from, but this combination really is unexpectedly good. The coziness and aroma of the fall from the Maple, and the unending comfort of chocolate.

These bars are too good to say no to.


Ingredients for Protein Chocolate Maple Bars

These high protein chocolate maple bars are made with a few healthy ingredients (no butter) and some classic – and some healthy – halloween canday.

  • Vanilla Protein Powder for healthy, sugar free pumpkin cookie
  • I used Quest Nutrition Vanilla whey-casein since it works best for baking.
  • Almond Butter Powder, also known as Powdered Almond Butter. I use the one from PB2.
  • Peanut Butter Powder is another alternative. I recommend Lakanto (the code HAYLSKITCHEN gives you a discount here).
  • PbFit or PB2 are good options too.
  • Maple Extract
  • Zero Calorie Sugar – This is the Monkfruit 1:1 Sugar Substitute from Lakanto, and keeps this recipe sugar free; (code HAYLSKITCHEN for a discount here)
  • Whole Wheat Pastry Flour
  • Coconut Flour
  • Unsweetened Applesauce
  • Almond Butter; I’d recommend American Dream Nut Butter Cookie Batter Almond Butter; Code HAYLSKITCHEN gives you a discount.
  • Baking Soda
  • An Egg
  • 1:1 Sugar Free Powdered Sugar Replacement: I used Lakanto powdered monk fruit and erythritol sweetener (code HAYLSKITCHEN gets you a discount here too)

Ingredients

  • 1/3 cup Vanilla Protein Powder, Whey-casein, 30g
  • 20 g Whole Wheat Pastry Flour
  • 2 Tbsp + 2 tsp Almond Butter Powder, 16g
  • 1 Tbsp Coconut Flour, 7g
  • 1/2 Tbsp Zero Calorie Sugar Substitute, 6g
  • 1/2 tsp Baking Soda
  • 1/3 cup Unsweetened Applesauce, 80g
  • 1 Egg
  • 1/2 Tbsp Flavored Almond Butter, 8g, Recommendation Below
  • 1/2 Tbsp Maple Flavoring
Chocolate Topping:
  • 1 oz Chocolate Bar, Sugar-free recommended below, 28g
  • 1/8 tsp Coconut Oil
  • 2-3 Tbsp Chocolate Cereal, 6g, Sugar-free recommended below
Instructions

Preheat oven to 350°F and line a loaf pan with parchment paper (or grease).
In a bowl combine vanilla protein powder, almond butter powder, flour, coconut four, sugar alternative and baking soda.
In another bowl, place whisk applesauce, egg, almond butter and maple flavor.
Add dry mix into wet and gently fold until uniform.
Pour batter into greased pan and spread evenly with a spatula or back of a spoon.
Bake about 13-15 minutes; Tester inserted should come out clean.
Transfer to cooling rack to cool completely.
Chocolate Topping:
Place the chocolate chips and coconut oil in a microwave safe bowl and microwave at 30 second intervals, stirring – for about 45 seconds until completely melted.Let cool slightly.
Spread over bars; Top with crushed chocolate cereal.Slice into 8 bars.

    This looks and sounds so yummy ! Please look into the zero sugar alternative- Monk fruit is fine (I also like Stevia for baking) but recently several research projects found that the erythritol is linked to some heart issues. It is produced in a lab - yup chemically created and very inexpensive! Yikes! Thanks!
