My family loves a good Lemon Bar. I mean come on, who doesn't...besides me. I'm just not a fan of Lemon flavored desserts or even lemonade.

Creamy Lemon Bars

it seems like I do my best baking for family members Birthdays. I am definitely a cake person for my Birthday. My family would like bars, pies or cobblers.

My inspiration for this recipe comes from thegirlwhoateeverything.com I made a few minor changes to this recipe and made the whole thing in my food processor. Original recipe makes it by hand in a bowl and doesn't talk about cutting the butter into the dry ingredients.

I love my Food Processor

I stumbled on to using my Food Processor for mixing some of my favorite recipes. My favorite pie dough is made in my Food Processor so, I thought why not try it for this recipe. It totally works! Cutting in the butter is so much easier this way and is a super time saver!! I really feel like most recipes out there are a basic guide for you to use. Make it your own!

Creamy Lemon Mixture

Once you press in have of the mixture in your pan, I used an 9x9 baking pan. Original recipes calls for a 8x11 pan. Pour in the creamy lemon mixture right on top. Now sprinkle the remainder of the mixture right on top of the lemon mixture and bake!

Ingredients

  • 1/2 cup unsalted butter, slightly softened
  • 1 cup brown sugar, lightly packed (dark brown sugar)
  • 1 1/3 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1 teaspoon baking powder
  • ½ teaspoons salt
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup lemon juice
  • zest of 1 1/2 lemon
Instructions

Preheat oven to 350 degrees and spray an 8x11 inch pan
Mix butter and brown sugar until well combined. Stir together flour, oats, baking powder, and salt. Add to the butter/sugar mixture and mix to combine. Press half of oat crumb mixture into the bottom of the pan.
Mix together condensed milk, lemon juice, and lemon zest. Spread onto the bottom layer of the crumb mixture. Take the other half of the crumb mixture mix and squeeze together with clean hands. Crumble on top of the lemon layer.
Bake for 20 to 25 minutes, or until top is golden brown.
Allow pan to sit on counter for 30 minutes and then refrigerate for at least 4 hours to set. Cut into squares and serve!
Tips
  • I added more lemon juice and zest to make these bars a bit tangier. You can decrease the amounts if you choose.
