These easy spring M&M cookie bars are the perfect treat for Easter gatherings, barbeques or just when you want to celebrate something special!

We are having a spring “heatwave” here in Iowa with lots of unseasonably warm weather in the 50’s and 60’s. The snow is finally gone and these warmer temps are fabulous to enjoy, especially after lots of being cooped up indoors this winter. With warm weather and sunshine spring has been on my mind, and I’ll be sharing lots of fun spring ideas and recipes over the next few days and weeks.


Unfortunately today I have a sick kid and we haven’t been able to enjoy the weather outside, so I wanted to bring a bit of spring inside for us to enjoy. These Spring M&M Cookie Bars are a perfect treat for spring, Easter or just to brighten up sick kids on a sunny day.

With just a few ingredients, you can have these easy Easter cookie bars ready to enjoy. Just use a large mixing bowl or stand mixer to combine the ingredients and you can have these ready to make in minutes.

Ingredients

  • 2 TSP Baking Soda
  • 1 TSP Salt
  • 1 Cup Butter Room Temperature
  • 1 1/4 Cup Brown Sugar
  • 1/2 Cup Granulated Sugar
  • 2  Large Eggs
  • 1 Pudding Packet
  • 1 Bag Easter or Spring M&M’s
  • 3 Cups Flour
Instructions

Preheat your oven to 350°F.
In a large bowl, mix together the butter, brown sugar, granulated sugar, pudding mix, eggs and vanilla.
Add the flour and baking soda.
Mix the ingredients well.
Spread mixture into a greased or silicone baking pan.
Sprinkle M&M's on top and bake for 20-25 minutes.
Remove from oven and let cool.
Serve & enjoy.

    It looks like you used vanilla instant pudding.....have you tried other flavors...just curious. I always have a variety, banana, coconut and chocolate. they look yummy
