Banana Peanut Butter Protein Bars
These banana and peanut butter flavoured protein bars are great for a quick and easy breakfast on the go or if you need a quick energy boost throughout the day. They are also very quick and easy to make and a great way to use over ripe bananas and a few cupboard essentials you may have lying around. The recipe can also be made vegan friendly with the use of vegan chocolate chips (or you could just replace the chocolate chips with nuts!) and it is a great way to enjoy a healthy, organic sweet treat!
These protein bars are a great solution for a quick and nutritious breakfast or snack and can be made ahead to help you with the weekly meal prep!
Mashed banana is mixed with maple syrup, peanut butter and coconut oil.
Rolled oats, whey protein and dark chocolate chips are then stirred into the mix.
The whole thing is then simply baked for 25 minutes before it can be cut up into simple, convenient bars of goodness!

Ingredients
- 2 over ripe bananas
- 1/2 cup sugar free peanut butter
- 1/2 cup maple syrup
- 3 tbsps coconut oil, melted
- 2 cups rolled oats
- 20g banana flavoured whey protein
- 100g dark chocolate chips
- 1/4 tsp salt
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Line and 8"x8" baking tin with parchment paper, shiny side up.
- Pell the bananas and place in a large mixing bowl, then mash to a smooth puree with a fork.
- Add the maple syrup, peanut butter and coconut oil to the bananas and mix well.
- Stir in the oats, whey protein, salt and the chocolate chips until combined.
- Spoon the mixture into the baking tin and spread evenly.
- Bake in the centre of your preheated oven for 25 minutes until set.
- Leave the dish to cook for at least 30 minutes before removing from the tin, then cut into 12 even pieces.
